- 400 gramos merluza
- 2 patatas medianas
- 1/2 cebolla
- Harina integral de espelta
- Para la salsa jardinera

- 3 zanahorias
- 150 gramos guisantes congelados

Una vez hecha, se agrega al bol de la patata y se aplasta y se mezcla todo, debe quedar como un puré el cual trabajaremos; haremos las albóndigas y se enharinan.


- Una vez pochadas las verduras se agrega el tomate y se deja cocer durante unos minutos. Se sube el fuego al máximo y se agrega un poco de vino blanco, cuando de evapora el alcohol se baja el fuego a la mitad, se sal pimienta y se añade hierbas provenzales y se deja cocer el sofrito hasta que el tomate cambie de color, en ese momento se agrega un poco de agua para que la salsa sea un poco más líquida y se mantiene a fuego medio bajo durante 5 minutos, en ese momento agregamos los guisantes.


- En una cazuela baja y amplia agregamos un poco de aceite de oliva y doramos las albóndigas, una vez doradas apagamos el fuego y le agregamos la salsa jardinera y tapamos para que repose y se integren todos los sabores.
