  17. Queso Gouda

  1. Pelamos, lavamos y cortamos las patatas en cubitos. Cubrimos con leche y llevamos a ebullición hasta que las patatas estén blandas.
  2. Reservamos la leche y trituramos las patatas, añadiendo sal, pimienta, mantequilla y leche al gusto, para llegar al sabor y la textura que nos guste.

  4. Mientras tanto podemos ir haciendo la salsa boloñesa: Pochamos la cebolla picada en una sarten a fuego medio con un fondito de aceite. Enseguida añadimos el pimiento, zanahoria y el diente de ajo, todo bien picado.
  5. Cuando la verdurá se haya caramelizado ligeramente, añadimos la carne picada. Removemos bien para soltarla y la dejamos dorarse. Añadimos un chorrito de vino tinto y dejamos reducir.
  6. Añadimos el tomate triturado, tapamos y dejamos reducir durante unos 20 minutos a fuego medio, removiendo de vez en cuando. Probamos y rectificamos de sal y añadimos especias y hierbas a gusto.
  7. Para montar el pastel necesitamos unos moldes o tapers aptos para el horno. Ponemos un fondo de puré de patatas, y cubrimos con capas de boloñesa y puré, alternandolas.
  8. Cubrimos con los queso havarti y queso gouda a gusto. También acepta bien mozarella, parmesano y otros...
  9. Horneamos 10 o 15 minutos a 200 grados, hasta que el queso esté fundido o gratinado a nuestro gusto.
